GRAPE VARIETY
Malvasia di Candia Aromatica from our Casotta vineyard trained to the guyot method.
The grapes are hand harvested to cases that are laid in an airy location until the drying stage comes to a slow and gradual end.

VINIFICATION
In December the grapes are pressed and the resulting must, a very dense and syrupy liquid, is immediately transferred to small wooden casks.
During the winter and spring a slow and partial alcoholic fermentation takes place.
In the summer, once the proper balance between the components is reached, the passito is bottled.

ALCOHOL CONTENT
13,5% vol.

SENSORIAL ANALYSIS
Color: strong bright golden yellow.
Aroma: very intense notes of apricot and dried peaches, honey and elder flowers.
Flavour: very full and balanced, sweet and persistent.

PAIRING
Aged and flavourful cheeses, dry pastries.
